The use of cheese in cooking knows no bounds. The possibilities are endless. There are hundreds, if not thousands, of cheeses, each with its own flavour and properties.
That is why a lot of cheeses are powdered and offered in powder form so that they have a long shelf life and are easy to incorporate into dishes. But sometimes a powdered cheese brings an annoying side effect for the texture. Sometimes the flavour is not intense enough so you have to dose so much that the powder starts playing tricks on the texture again. Or sometimes allergens are challenges or you want to prepare a vegan dish.
